Gayle's Christie's Coleslaw Recipe

Christie's Coleslaw

Serves 6

1 small head (1 1/2 pounds) red or green cabbage, or a mixture of both, shredded
6 carrots, cut into curls with a peeler
1 bunch scallions, thinly sliced (1/2 cup)
1 bunch cilantro, stemmed and coarsely chopped (1 cup, loosely packed)

Dressing
1/2 cup low-fat mayonnaise
2 tablespoons grated gingerroot
2 tablespoons grated onion
1/3 cup granulated sugar, or 2 tablespoons honey
1/2 cup rice vinegar
1 teaspoon salt
1 teaspoon pepper
Topping
1/4 cup candied ginger, finely chopped
1/4 cup peanuts, chopped

Combine the vegetables and cilantro in a large bowl. Whisk the dressing ingredients together in a medium bowl until well mixed. Dress the slaw with the dressing so that it is well coated. Place the coleslaw in a serving dish and top with the chopped candied ginger and chopped peanuts.
