Gayle's Anahola Cookie Recipe

Joe learned this recipe from Michelle Aheran at Michelle's Cafe in Kapaa, Kauai. When baked, these cookies resemble the mountains on the west coast of Kauai -- they're mounded in the center and flat around the edges.

Anahola Chocolate Chip Cookies

3/4 cup unsalted butter, at room temperature
1/4 cup margarine, at room temperature
1 cup firmly packed light brown sugar
2/3 cup granulated sugar
1 large egg, plus 1 egg yolk
1 teaspoon pure vanilla extract
2 cups all-purpose flour
2/3 cup rolled oats, finely ground
(in a food processor or blender)
1 teaspoon baking soda
Scant 1/2 teaspoon salt
1 1/3 cups semi-sweet chocolate chips
1 1/3 cups walnut pieces

Preheat the oven to 350 degrees. Line two large baking sheets with parchment paper.

In the bowl of a tabletop mixer fitted with the flat beater, cream the butter and margarine until fluffy. Add the sugars and mix until incorporated.

In a small bowl, beat the egg and egg yolk. Add the vanilla. Slowly add the egg-vanilla mixture to the creamed mixture and combine well.

In a separate bowl, combine the flour, oats, baking soda, and salt. Add the dry ingredients to the creamed mixture and mix to blend well.

Remove the beater form the mixer and, using a wooden spoon, gently incorporate the chocolate chips and walnut pieces in to the dough, being careful not to break up the walnuts.

Using two tablespoons, drop 2 generous tablespoons of dough 2 1/2 inches apart on the prepared baking sheets. Do not flatten the cookies. Bake on the center rack in the oven for 15 minutes, or until golden brown.
